Creamy Potato Soup with Bacon & Cheddar

Thick potato soup loaded with bacon and sharp cheddar. Serve it with crusty bread and call it dinner. Winter in a bowl. Thematically, a lot of the soups in this collection are made to put you to sleep. This is one of them.

Ingredients

  • 4 strips bacon, chopped
  • 1 small onion, chopped
  • 2 tbsp flour
  • 3 cups diced potatoes
  • 4 cups chicken broth
  • 1 cup milk or cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions (optional)

Instructions

  1. Cook bacon in soup pot until crisp. Remove and set aside.
  2. Sauté onion in bacon fat until soft. Stir in flour and cook 1 minute.
  3. Add potatoes and broth. Bring to a boil, then simmer 15–20 minutes until potatoes are tender.
  4. Stir in milk/cream and cheese. Heat gently until cheese is melted.
  5. Top with reserved bacon and green onions to serve.
