Thick potato soup loaded with bacon and sharp cheddar. Serve it with crusty bread and call it dinner. Winter in a bowl. Thematically, a lot of the soups in this collection are made to put you to sleep. This is one of them.
Ingredients
4 strips bacon, chopped
1 small onion, chopped
2 tbsp flour
3 cups diced potatoes
4 cups chicken broth
1 cup milk or cream
1 cup shredded cheddar cheese
Salt and pepper to taste
Chopped green onions (optional)
Instructions
Cook bacon in soup pot until crisp. Remove and set aside.
Sauté onion in bacon fat until soft. Stir in flour and cook 1 minute.
Add potatoes and broth. Bring to a boil, then simmer 15–20 minutes until potatoes are tender.
Stir in milk/cream and cheese. Heat gently until cheese is melted.
Top with reserved bacon and green onions to serve.
