Cucumber Tomato and Feta Salad

Cold, crisp, and refreshing. This salad is all about clean cuts, good olive oil, and knowing when to stop.

Ingredients

  • 2 large cucumbers, cut into chunks
  • 1½ cups cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • ½ tsp dried oregano
  • Kosher salt

Instructions

  1. Combine cucumbers and tomatoes in a bowl.
  2. Drizzle with olive oil and vinegar.
  3. Add oregano and a pinch of salt.
  4. Toss gently and serve immediately.
