All the comfort and mess of a sloppy joe, built on lentils instead of meat. Savory, sticky, and satisfying enough that nobody misses a thing.
Ingredients
- 1½ cups cooked brown or green lentils
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- ¾ cup tomato sauce
- 1 tbsp Worcestershire sauce (vegetarian if needed)
- 1 tsp chili powder
- ½ tsp smoked paprika
- Kosher salt
- Black pepper
- Buns, for serving
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until soft, 5–7 minutes.
- Add garlic and cook 30 seconds.
- Stir in tomato paste and spices; cook until darkened slightly.
- Add lentils, tomato sauce, and Worcestershire.
- Simmer 10–15 minutes until thick and cohesive.
- Season to taste and serve on buns.
