Lentil Sloppy Joes

All the comfort and mess of a sloppy joe, built on lentils instead of meat. Savory, sticky, and satisfying enough that nobody misses a thing.

Ingredients

  • 1½ cups cooked brown or green lentils
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • ¾ cup tomato sauce
  • 1 tbsp Worcestershire sauce (vegetarian if needed)
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Kosher salt
  • Black pepper
  • Buns, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and cook until soft, 5–7 minutes.
  3. Add garlic and cook 30 seconds.
  4. Stir in tomato paste and spices; cook until darkened slightly.
  5. Add lentils, tomato sauce, and Worcestershire.
  6. Simmer 10–15 minutes until thick and cohesive.
  7. Season to taste and serve on buns.
