Sheet Pan Sausage, Potatoes, and Onions

This is weeknight cooking at its most honest: sausage, potatoes, and onions roasted hot until everything is browned, blistered, and deeply satisfying. One pan, no drama.

Ingredients

  • 1½ lb smoked or fresh sausage, sliced into chunks
  • 1½ lb potatoes, cut into bite-size pieces
  • 1 large onion, sliced
  • 3 tbsp olive oil
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Heat oven to 425°F.
  2. Toss sausage, potatoes, and onions with olive oil, salt, and pepper.
  3. Spread evenly on a sheet pan without crowding.
  4. Roast 25 minutes, flip everything, then roast another 15–20 minutes until deeply browned.
