Ingredients
1½ lb smoked or fresh sausage, sliced into chunks
1½ lb potatoes, cut into bite-size pieces
1 large onion, sliced
3 tbsp olive oil
Kosher salt
Freshly ground black pepper
Instructions
Heat oven to 425°F.
Toss sausage, potatoes, and onions with olive oil, salt, and pepper.
Spread evenly on a sheet pan without crowding.
Roast 25 minutes, flip everything, then roast another 15–20 minutes until deeply browned.
Taste and adjust seasoning before serving.
