Simple Grain Bowl with Roasted Vegetables

A flexible grain bowl built on roasted vegetables, hearty grains, and good seasoning. This is food you can adapt endlessly without losing its center.

Ingredients

  • 1 cup farro, barley, or brown rice
  • 2 cups mixed vegetables (sweet potato, broccoli, carrots, onion)
  • 2 tbsp olive oil
  • Kosher salt
  • Black pepper
  • 1 tbsp lemon juice or red wine vinegar

Instructions

  1. Cook grains in well-salted water until tender; drain thoroughly.
  2. Toss vegetables with olive oil, salt, and pepper.
  3. Roast at 425°F for 25–30 minutes until deeply caramelized.
  4. Combine grains and vegetables in a large bowl.
  5. Finish with lemon juice or vinegar and adjust seasoning.
