A flexible grain bowl built on roasted vegetables, hearty grains, and good seasoning. This is food you can adapt endlessly without losing its center.
Ingredients
- 1 cup farro, barley, or brown rice
- 2 cups mixed vegetables (sweet potato, broccoli, carrots, onion)
- 2 tbsp olive oil
- Kosher salt
- Black pepper
- 1 tbsp lemon juice or red wine vinegar
Instructions
- Cook grains in well-salted water until tender; drain thoroughly.
- Toss vegetables with olive oil, salt, and pepper.
- Roast at 425°F for 25–30 minutes until deeply caramelized.
- Combine grains and vegetables in a large bowl.
- Finish with lemon juice or vinegar and adjust seasoning.
