Braxtaff Method Ribs

Ribs done low and slow with a simple rub. No sauce until the end—if at all. Smoke does the talking. Tender, with a little pull. These are not the mushy kind that just slide off the bone, but they WILL be very tender. A small amount of sauce is added at the end of the cook, and quickly baked on. Kind of a hybrid between dry rubbed and sauced.

Ingredients

  • 2 racks baby back pork ribs
  • Yellow mustard
  • Favorite rib rub (sweet and spicy)
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • Honey or maple syrup
  • BBQ sauce for glazing

Instructions

  1. Remove membrane and coat ribs in mustard. Apply rub generously.
  2. Smoke at 225°F for 2 hours unwrapped.
  3. Wrap in foil with butter, sugar, and honey. Smoke 2 more hours.
  4. Unwrap and glaze with sauce. Smoke final hour to set glaze.
  5. Rest before slicing.
