Vegetarian Chili with Beans and Cocoa

A deeply flavored vegetarian chili with layers of spice and a subtle hint of cocoa that adds seriousness without sweetness.

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tbsp cocoa powder
  • 2 cans diced tomatoes
  • 3 cans mixed beans, drained
  • 1½ cups vegetable broth
  • Kosher salt
  • Black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft.
  3. Add garlic and spices; cook until fragrant.
  4. Stir in tomatoes, beans, and broth.
  5. Simmer uncovered 45 minutes until thick.
  6. Season to taste before serving.
