A deeply flavored vegetarian chili with layers of spice and a subtle hint of cocoa that adds seriousness without sweetness.
Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tbsp cocoa powder
- 2 cans diced tomatoes
- 3 cans mixed beans, drained
- 1½ cups vegetable broth
- Kosher salt
- Black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft.
- Add garlic and spices; cook until fragrant.
- Stir in tomatoes, beans, and broth.
- Simmer uncovered 45 minutes until thick.
- Season to taste before serving.
