Balsamic Roasted Brussels Sprouts with Bacon

This is one of those things that I did not appreciate until I was well into my thirties. I always found them bitter. I, however, had never had them roasted. The more slowly they are browned the better the natural sugars are rleased. The bacon and the balsamic easily offsets any bitterness that is left. Trader joes sells brussels sprouts still on the vine in the fall, and they are worth a look.

Ingredients

  • 1 1/2 lbs Brussels sprouts, halved
  • 4 slices thick-cut bacon, chopped
  • 2 tbsp olive oil
  • Salt and black pepper
  • 1 tbsp balsamic vinegar
  • 1 tsp honey (optional)

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment.
  2. Toss sprouts with oil, bacon, salt, and pepper.
  3. Roast 25–30 minutes, stirring halfway, until crisp and golden.
  4. Drizzle with balsamic (and honey, if using) just before serving.
  5. Serve hot or warm.
