Ginger Crab Corn Chowder
A warming chowder with fresh ginger, sweet corn, and delicate crab
Ingredients
- 2 cups whole milk
- 2 cups chicken stock
- 8 oz cooked crab
- 32 oz (pkg) white or sweet yellow corn (½ cup DV)
- 2 tbsp green onions (DV)
- 6 slices pancetta or lightly smoked bacon, sautéed
- 4 teaspoons fresh ginger (DV)
- 1 tsp lemon juice (DV)
- 2 tbsp butter (¼ stick butter)
Instructions
- Boil corn in milk. Set aside, covered for 10 mins.
- Purée. Add ½ of onions, ginger. Add all of pancetta and chicken stock. Force 3 mins.
- Sauté remaining ingredients: corn, onion, ginger, crab in butter. Stir in lemon juice to pan. Add sautéed ingredients. Serve.
Recipe Note:
The fresh ginger really makes this chowder sing - don't skip it! The combination of sweet corn and delicate crab with that warming ginger kick is absolutely perfect for a cold day.
