Instructions

  1. Boil corn in milk. Set aside, covered for 10 mins.
  2. Purée. Add ½ of onions, ginger. Add all of pancetta and chicken stock. Force 3 mins.
  3. Sauté remaining ingredients: corn, onion, ginger, crab in butter. Stir in lemon juice to pan. Add sautéed ingredients. Serve.
Recipe Note: The fresh ginger really makes this chowder sing - don't skip it! The combination of sweet corn and delicate crab with that warming ginger kick is absolutely perfect for a cold day.
