Loaded Baked Potato Hot Dish

All the flavors of a loaded baked potato in casserole form. Tender potato chunks, crispy bacon, sharp cheddar, sour cream, and green onions baked until bubbly and golden. This is comfort food at its finest – rich, satisfying, and guaranteed to disappear at any potluck. Make it ahead and bake it when you're ready to eat.

Ingredients

  • 3 lbs russet potatoes, cubed (about 6 medium potatoes)
  • 1 lb bacon, cooked crispy and crumbled
  • 3 cups shredded sharp cheddar cheese, divided
  • 1/2 cup sour cream
  • ½ cup milk
  • 4 tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 green onions, sliced
  • 1 cup crushed cornflakes or Ritz crackers (topping)

Instructions

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Add cubed potatoes and parboil for 8-10 minutes until just tender but not falling apart. Drain well.
  3. In a large bowl, combine sour cream, milk, melted butter, garlic powder, salt, and pepper. Mix well.
  4. Add parboiled potatoes, 2 cups cheddar cheese, and ¾ of the crumbled bacon. Fold gently to combine.
  5. Transfer to prepared baking dish and spread evenly. Top with remaining 1 cup cheddar cheese and remaining bacon.
  6. Mix crushed cornflakes with 2 tablespoons melted butter and sprinkle over the top.
  7. Bake for 30-35 minutes until hot, bubbly, and golden on top.
  8. Let cool 5 minutes, then top with sliced green onions. Serve hot.
