Giant Dill Pickle Pasta Salad

Tangy, vinegar-based pasta salad loaded with dill pickles. Refreshing, bright, perfect for picnics. The pickle brine does all the work.

Ingredients

  • 1 lb rotini or shell pasta
  • 1 cup chopped dill pickles
  • 1/2 cup pickle juice
  • 1/4 cup mayo
  • 1/4 cup Italian Dressing
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh dill

Instructions

  1. Cook pasta, drain, and rinse with cold water.
  2. Toss warm pasta with pickle juice. Let sit 10 min, then drain excess.
  3. Mix mayo, Italian dressing, garlic powder, and seasoning.
  4. Fold in pasta, chopped pickles, and dill. Chill until ready to serve.
Notes:
  • Add cheddar cubes or cubed summer sausage for a fuller meal.
