Scandinavian Yellow Split Pea Soup

Yellow split peas, ham, vegetables, simmered until thick. Scandinavian comfort food that's been keeping Minnesotans warm for generations. Serve with rye bread. I love making this after Christmas. I used to get sent home with ham bones from gatherings for this very reason.

Ingredients

  • 1 tbsp butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 cup yellow split peas, rinsed
  • 6 cups water or chicken broth
  • 1 ham bone or 1 cup diced ham
  • 1/2 tsp dried marjoram
  • Salt and pepper to taste

Instructions

  1. In a soup pot, sauté onion and carrots in butter until softened.
  2. Add split peas, broth, ham, and marjoram. Bring to a boil.
  3. Reduce heat, cover, and simmer 1.5–2 hours, until peas are soft.
  4. Remove bone, shred meat, and return to soup. Adjust seasoning and serve.
