A Midwest summer classic. You could boil the brats in beer before you smoke them, but his will leave them a little drier than if you do this as the final step.
Ingredients
2 lbs bratwurst
1 bottle lager or amber beer
1 onion, sliced
1 tbsp butter
Sauerkraut, mustard, pretzel rolls
Instructions
Smoke brats at 250°F for 1 hour.
Meanwhile, simmer onions in beer and butter until soft.
Transfer brats to beer bath and simmer 10 minutes.
