Smoked Bratwurst Platter (Wisconsin Style)

A Midwest summer classic. You could boil the brats in beer before you smoke them, but his will leave them a little drier than if you do this as the final step.

Ingredients

  • 2 lbs bratwurst
  • 1 bottle lager or amber beer
  • 1 onion, sliced
  • 1 tbsp butter
  • Sauerkraut, mustard, pretzel rolls

Instructions

  1. Smoke brats at 250°F for 1 hour.
  2. Meanwhile, simmer onions in beer and butter until soft.
  3. Transfer brats to beer bath and simmer 10 minutes.
  4. Serve on pretzel buns with kraut and mustard.
