Reuben Sandwich with Sauerkraut & Swiss

Corned beef, Swiss, sauerkraut, Thousand Island on rye. Grilled until the cheese melts and the bread crisps. Deli perfection that needs no improvements. Look, I know it seems like filler to include a recipe like this here. But the fact is, there are millions of disenfranchised souls who have never had a Reuben, or even a Rachel.

Ingredients

  • 8 slices rye bread
  • 8 slices corned beef (or sliced deli turkey for a Rachel)
  • 4 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/4 cup Russian or Thousand Island dressing
  • Butter for grilling

Instructions

  1. Spread dressing on bread slices.
  2. Layer cheese, meat, and sauerkraut between bread.
  3. Butter outsides and grill on skillet until golden and cheese melts.
  4. Slice and serve hot with pickles.
