Chicken Wild Rice Soup

Minnesota's unofficial state soup. Wild rice, chicken, cream, vegetables. Thick, hearty, and perfect for October when the cold starts creeping in. Buy wild rice uncooked and cook in advance. Wild rice typically takes about 45 mins to cook. Throughout the midwest it is possible to find it hand harvested, and it is delicious.

Ingredients

  • 1 tbsp butter
  • 1 small onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 6 cups chicken broth
  • 2 cups cooked wild rice
  • 2 cups cooked, shredded chicken
  • 1 cup heavy cream

Instructions

  1. In a large pot, melt butter over medium heat. Add onion, celery, and carrots. Cook until softened.
  2. Stir in thyme, salt, and pepper. Pour in chicken broth and bring to a simmer.
  3. Add wild rice and shredded chicken. Simmer 10 minutes.
  4. Stir in cream and heat through without boiling. Adjust seasoning to taste.
