Fried Chicken Sandwich with Mayo & Pickles

This is just one of those perfect things. They can be made en masse and they're just good every time. Put cole slaw on it too if you want! This also works with chicken fried steak. I prefer to use the cajun seasoning over the seasoned salt in the flour, but thats just me. When frying anything, if you don't season your flour, then start. Also, adding hot sauce to your buttermilk marinade is crucial for tenderness and flavor.

Ingredients

  • 2 boneless chicken thighs
  • 1 cup buttermilk
  • 6 dashes red vinger hot sauce like Franks or Crystal
  • 1 cup flour
  • 1 tbsp Cajun seasoning or seasoned salt
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Neutral Oil for frying
  • 2 brioche buns
  • Mayonnaise
  • Dill pickle slices

Instructions

  1. Marinate chicken in buttermilk and hot sauce for at least 1 hour, up to 6.
  2. Mix flour with seasonings. Dredge chicken in flour.
  3. Fry in hot oil (350°F) until golden and internal temp hits 165°F.
  4. Toast buttered buns and assemble with mayo and pickles.
