Grilled Salmon with Pesto Guacamole

Perfectly grilled salmon topped with creamy pesto-avocado sauce. Rich, bright, herbal, and somehow makes you feel fancy without any fuss. This is so bright and colorful in the summertime, its one of my favorite things to cook over a charcoal grill and eat outside.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 2 ripe avocados
  • ¼ cup basil pesto
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 2 tbsp diced red onion (optional)
  • Cherry tomatoes, halved (garnish)
  • Lemon wedges

Instructions

  1. Make pesto guacamole: mash avocados, stir in pesto, lemon juice, garlic, and red onion. Season with salt and pepper. Refrigerate.
  2. Preheat grill to medium-high (400-425°F). Clean and oil grates.
  3. Pat salmon dry. Brush with olive oil, season with salt, pepper, and garlic powder.
  4. Grill skin-side up first for 4-5 minutes without moving.
  5. Flip and grill 3-4 minutes more until internal temp reaches 125-130°F.
  6. Let rest 2-3 minutes. Top with pesto guacamole, garnish with cherry tomatoes, serve with lemon wedges.
