Pasta alla Goodness (w/ or without Vodka)
Bacon, tomatoes, vodka, and cream - pure Italian-American indulgence
Ingredients
- ½ onion or 4 shallots
- 5 cloves of garlic
- 2 tsp red pepper flakes
- 1 28oz can San Marzano tomatoes
- 5 strips of bacon, chop
- ¼ cup basil, rough chop
- 1 cup heavy whipping cream
- 3 pats of butter
- Sea salt
- Pepper
- ⅓ cup vodka
- Parmigiano Romano to taste
Instructions
- Cook bacon. Drain most fat, leaving 2oz.
- Sauté onion in bacon fat. Add garlic and red pepper when onion becomes translucent. Add tomato. Cook 10 minutes on medium.
- Add vodka. Cook 5 more minutes. Turn off heat. Add cream, basil, bacon, S+P and parm.
- Purée in food processor. Return to heat for 3 mins.

*Add to cooked ravioli
*Garnish with basil chiffonade
