Peach Cobbler with Sugar Crust

I don't think I'd ever even had a cobbler until I was like 25. That is a quarter of a century that I will never get back.

Ingredients

  • 4 cups peeled, sliced peaches (fresh or frozen)
  • 1/2 cup sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 cup milk
  • 1/2 cup (1 stick) butter, melted

Instructions

  1. Preheat oven to 350°F. Grease a baking dish.
  2. Toss peaches with 1/2 cup sugar, lemon juice, and cinnamon. Set aside.
  3. In a bowl, mix flour, remaining sugar, baking powder, and milk to make batter.
  4. Pour melted butter into pan. Spoon batter over butter—do not stir.
  5. Add peaches over top. Do not stir.
  6. Bake 40–45 minutes until golden and bubbling.
  7. Serve warm with vanilla ice cream.
