Reuben Dip

All the flavors of a Reuben without the bread getting in the way. Practically a health food? Serve it hot with rye crackers or just Ritz.. Deli meat, Swiss, kraut, and Thousand Island in one warm, easy deliverable. This is one of those recipes that can benefit from being made in separate small ramekins and baked with cheedar or gruyere on top.

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded Swiss cheese
  • 1 cup chopped corned beef, deli is fine
  • 1/2 cup sauerkraut, drained and chopped
  • 1/4 cup Thousand Island dressing
  • Rye crackers or cocktail bread, for serving

Instructions

  1. Preheat oven to 375°F.
  2. Mix all ingredients in a bowl, then spread into ramekins or an 11x7 baking dish.
  3. Bake 20–25 minutes until bubbly and golden.
  4. Serve warm crackers or bread.
