I wanted to pick the most sophisticated recipe I could find from Ohio. So here it is. I will admit, Bologna gets a bad rap until you fry it. Crispy edges, soft center, cheap meat elevated by heat. Serve on white bread with mustard and pickles. No apologies.

Ingredients

  • 1 lb thick-cut bologna slices
  • Slider buns
  • Yellow mustard
  • Pickles
  • Optional: grilled onions or cheese

Instructions

  1. Score edges and middle of bologna to prevent curling.
  2. Pan-fry slices until browned and crispy at edges.
  3. Toast buns and assemble with mustard, pickles, and other toppings.
  4. Honestly, if you're feeling like a real degenerate you can assemble the sammiches and then fry them again like a grilled cheese.
