Roasted Curry Carrots

Eaasily one of my favorite sides of all time. Especially in the fall and winter. Savory, sweet, salty and a little bit of spicy warmth from the inclusion of garam masala and curry powder. For curry novices, this has no heat, just the same kind of warmth you get from allspice.

Ingredients

  • 1 lb carrots, peeled and sliced on the bias
  • 2 tbsp olive oil
  • 1 tsp curry powder
  • 1/2 tsp garam masala or ras el hanout
  • 1/2 tsp garlic powder
  • Salt and pepper
  • Fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F.
  2. Toss carrots with oil, curry, garlic, salt, and pepper.
  3. Spread on baking sheet and roast 20–25 minutes until tender and browned.
  4. Sprinkle with fresh herbs before serving if desired.
