Pesto Mayo BLT (Detroit Childhood Favorite)

In Grosse Pointe Park, MI, there used to be an amazing little restaurant called Lucy's Tavern on the Hill. They made the best damned BLT with this pesto mayo. I used to love to go there, drink Gentleman Jack on the rocks and have one of these whenever it was on the specials menu. I was fortunate enough to have this place as my neighborhood watering hole for a few years until they closed; and I am grateful for the friends I made among staff and patrons alike.

Ingredients

  • 8 slices thick-cut bacon
  • 8 slices sourdough or white bread, toasted
  • 1 large tomato, sliced
  • Lettuce (romaine or leaf)
  • 1/4 cup mayonnaise
  • 2 tbsp prepared basil pesto
  • Salt and pepper

Instructions

  1. Cook bacon until crisp and drain on paper towels.
  2. Mix mayo and pesto together.
  3. Toast bread and spread pesto mayo on each slice.
  4. Layer bacon, tomato slices (salted), and lettuce.
  5. Top with second slice of bread and slice diagonally.
