Sue Devoid's Dead at 40 Mac N' Cheese

I love this mac and cheese so much. It is my aunt Sue's recipe, which has been tested and tweaked over the years. It makes plenty, but should be eaten with caution. I think I was 21 when I wrote this recipe down, so 40 seemed a long way off. Well, here we are. And still, this should be made sparingly and treated with extremem caution, although it is perfectly rich and indulgent.

Ingredients

  • 1 lb elbow macaroni
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded smoked gouda
  • 1 cup of the sharpest white cheddar you can find, shredded.
  • 1 cup shredded Colby-Jack
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup buttered breadcrumbs (optional)

Instructions

  1. Cook macaroni and drain.
  2. Heat milk and cream gently in a saucepan, then stir in cheeses and seasonings until melted.
  3. Combine cheese sauce with pasta and pour into baking dish.
  4. Top with breadcrumbs if using and bake at 375°F for 20–25 mins.
